Bruschetta is one of my favorite recipes in the summer. It’s easy, fresh, and perfect for summer nights. I’ve been trying to avoid garlic (more on that later…) and wanted to try a twist on the classic recipe and I had some strawberries calling out for invention. The result is surprisingly delicious and husband-approved!

I think simple recipes with fresh ingredients are the best. Eating good, healthy food doesn’t always have to involve fancy cooking skills, but is sometimes just a matter of combining the right fresh ingredients. It’s all about creativity, right?

 

Balsamic Strawberry, Basil, and Goat Cheese Bruschetta (inspired by this recipe)

 

Ingredients

1 sourdough baguette, sliced on the diagonal and toasted
4 oz goat cheese at room temperature
1 pint/basket fresh strawberries, diced
2 tablespoons balsamic vinegar
1/4 cup fresh basil leaves, chopped

 

Directions

In a small bowl, stir strawberries with balsamic and basil. Spread goat cheese over toasted bread slices and top with strawberry mixture. Enjoy!

 

 

P.S. I would also highly recommend using any leftover strawberry/basil/balsamic mixture on a grilled cheese! It’s amazing. : )

  2. ooh that does look delicious. I don’t think that bread would last long enough to be made into bruschetta in my household though. We’d just eat the loaf!
