
This week’s recipe is an easy & healthy snack idea! After I made these Nick took some to work and they were a HIT! They are a tasty little treat without much guilt because there is no refined sugar. They are also dairy free, vegan, and gluten free (if you use certified gluten free oatmeal). Best part? They are an energizing snack and are great to have on hand!

No Bake Energy Bites
Ingredients:
1 cup dry oatmeal (use certified gluten free if you’d like!)
2/3 cup toasted coconut flakes
1/2 cup nut butter (I used almond butter but peanut butter would be great, too!)
1/2 cup ground flaxseed
1/2 cup chocolate chips (optional)
1/3 cup honey
1 tsp. vanilla
Directions:
Lightly toast coconut flakes at 350 degrees for 3-5 minutes, watching closely. (You don’t have to toast the coconut, but it brings out the flavor nicely!) Meanwhile, measure other ingredients.
Stir all ingredients together in a medium bowl until thoroughly mixed.
Let chill in the refrigerator for 20-30 minutes.
Once chilled, roll into balls with about 1″ in diameter. (A little tip: get your hands wet first to avoid a sticky mess!)
Store in an airtight container and keep refrigerated for up to 1 week.
Makes about 25-30 balls.

Hi Pamela, I think you definitely could! I would start by adding half the amount and tasting it just to make sure it’s not overly sweet. Enjoy!
